Mini Corn Dog Muffins

I don’t know about you, but I love corn dogs, and my family does too!

They’re one of those things that we look forward to eating every year at the fair. Sure, you can buy them frozen any time, but there’s just something extra special about a freshly made corn dog, warm and tasty!  

And what’s not to love? A savory hot dog, with sweet cornbread batter, that’s baked to golden perfection . . . it’s heaven on a stick!

Plus, since they’re made with such simple ingredients (most of which you probably already have at home), they’re pretty cheap to make!

It’s no wonder they’ve been a popular fair food since the 1940s! In recent years, they’ve been a trending street food item . . . especially in Korea (my home country).

So it came as no surprise to me that they’d be fantastic in a different form. One that’s bite-size and doesn’t require frying for a healthier and easier recipe: 

Mini Corn dog muffins!

Even just the name makes me happy. Because who doesn’t love muffins?! and all things mini!!!

You can follow the recipe below to whip up a batch of 36 mini corn dog muffins in about 20 minutes.

Serve them on their own as a snack or with a side dish for lunch and dinner. They’re also perfect for game day, picnics, and all types of get-togethers because they are just so easy to serve and eat!  

We love to serve them with ketchup and mustard, but you’re free to get creative with whatever toppings you like on your hotdogs! They can even be added to a bowl of chili for some a bit of extra razzle dazzle.

Servings:  36 mini muffins

Prep: 10 minutes| Cook Time: 10 minutes | Total Time: 20 minutes

Supplies

  • Nonstick cooking spray
  • Mini Muffin Tin
  • Large Mixing Bowl

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 TBS sugar
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 egg 
  • ¼ cup canola oil
  • 8 hot dogs cut into 1 inch pieces

Directions:

Step 1: Prepare to Bake

Preheat oven to 425 degrees F (220 degrees C) and grease a mini muffin pan with non stick spray.

Step 2: Make your Corn Muffin Batter

In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

Then add the milk, eggs and oil. Stir until all the ingredients are mixed together and the batter is not lumpy.

Step 3: Make the Corn Dog Muffins

Add one tablespoon of batter to each spot in your muffin tin.

Put one piece of hotdog into each filled muffin cup. Use a spoon to gently press the hotdog into the center of the batter.

Step 4: Bake and enjoy!

Bake 10 minutes or until baked through and golden brown.

Let cool, and enjoy while they are still warm.

  • You can store leftover mini cord muffins in the fridge, then reheat them in the oven or microwave.
