Step 1: Prepare to Bake
- Preheat oven to 425 degrees F (220 degrees C) and grease a mini muffin pan with non stick spray.
Step 2: Make your Corn Muffin Batter
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. Then add the milk, eggs and oil. Stir until all the ingredients are mixed together and the batter is not lumpy.
Step 3: Make the Corn Dog Muffins
- Add one tablespoon of batter to each spot in your muffin tin. Put one piece of hotdog into each filled muffin cup. Use a spoon to gently press the hotdog into the center of the batter.
Step 4: Bake and enjoy!
- Bake 10 minutes or until baked through and golden brown. Let cool, and enjoy while they are still warm.
