With only 6 ingredients and a scoop of Lucky Charms, these cookies will be all the luck you need this St. Patrick’s Day for a successful holiday treat. When it comes to breakfast cereals, there’s a reason that Lucky Charms has stood the test of time. Since 1964, kids (and kids-at-heart) have loved pouring big bowls of this sweet and fruity cereal. 

If your kids are anything like mine (or, I’ll be honest, me) their favorite part is definitely the fun-shaped marshmallows. In fact, people love the marshmallows so much that General Mills sells the marshmallows separately here! My kids would die if this was still on the grocery store shelves–rumor has it, you may be able to find some at a store near you. You could also use these rainbow charm marshmallows.

So it comes as no surprise that they’d feature so well in some delicious baked goods. After all, marshmallows practically beg to be used in some ooey gooey deliciousness, don’t they? Which is why I love whipping up a batch of Lucky Charms cookies. They’re magically delicious! (Pun totally intended.)

And, of course, they’re fantastic when dipped in some cold milk. How could they not be? Lucky Charms Cereal was made for milk! 

These soft and chewy sugar cookies are great for birthday parties and everyday snacking, but they’re especially perfect St. Patrick’s Day cookies. You could even leave some cookies out next to your leprechaun traps because who says Santa is the only holiday visitor who deserves cookies!?!

How long do Lucky Charms cookies last?

If you’re in my house, not very long. These deliciously chewy cookies get scarfed down so fast you’d swear they just disappeared into thin air. However, if you keep them in an airtight container at room temp, they’ll stay pretty fresh for up to 5 days.

Can you freeze Lucky Charms cookies?

Want to freeze some for later? Store them in an airtight container and they’ll still be tasty for up to 4  months. Same thing with the uncooked cookie dough! Simply roll the dough into cookie dough balls before placing them in an airtight storage container and they’ll be good to go for up to 4 months. Then you can thaw and bake however many you want!

However, keep in mind that the texture and appearance of the marshmallows will likely change during the freezing and thawing process. 

Fun Activities To Do While The Cookies Are Baking

Besides sitting and staring at the oven while your cookies bake, pass the time with our favorite St. Patrick’s Day activities. Send your kids on a Rainbow Hunt, starting with objects that are the color Green for St. Patrick’s Day. Make a Leprechaun Craft that can double as a treat bag to put cookies in and share with lucky friends and family. Lucky Charm Cookie Recipe

Servings:   12 Cookies 

Prep: 10 minutes| Cook Time: 13 minutes | Total Time: 23 minutes

1 cup all purpose flour

3 tsp baking powder

¼ cup butter (softened–not cool and hard, but not totally room temperature and melty)

½ cup brown sugar or granulated sugar (Use what you have)

1 egg

1 cup Lucky Charms Marshmallows only-plus several set aside for toppings (General Mills sells the marshmallows separately here!)

I provided printable directions at the end of this post for your baking convenience. 

Preheat your oven to 350°F and line a baking sheet with parchment paper and set aside.

Step 1: Cream Sugar

Using a hand mixer or stand mixer, beat together 1/4 cup butter and 1/2 sugar until they are well incorporated (evenly mixed)

Add 1 egg to the mixture and beat again until well incorporated. 

Step 2: Mix Dry Ingredients

In a small bowl, mix together 1 cup flour and 3 tsp baking powder.

Step 3: Make Lucky Charms Cookie Dough

Slowly add the flour mixture to the mixing bowl, and beat together until the creamed sugar and flour mixture are well incorporated. 

Step 4: Add the Magic to your Cookies

Fold in 1 cup Lucky Charms marshmallows and roll dough into 1 inch balls and place on your prepared baking sheet. 

Step 5: Bake Cookies and Enjoy

Bake cookies for 12 minutes or until lightly golden brown. 

Remove the cookies from the oven.

Optional: Once you remove the cookies quickly place a few marshmallows on the top of the cookies for added decoration. Enjoy!
