Lucky Charms Cookie Recipe: A Magic St. Patrick's Day Treat

Ingredients Method

Ingredients
  

  • 1 cup all purpose flour
  • 3 tsp baking powder
  • 1/4 cup butter (softened--not cool and hard, but not totally room temperature and melty)
  • 1/2 cup brown sugar or granulated sugar (Use what you have)
  • 1 egg
  • 1 cup Lucky Charms Marshmallows General Mills sells the marshmallows separately (see link: https://amzn.to/3UFR2eo)

Method
 

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper and set aside.
Step 1: Cream Sugar
  1. Using a hand mixer or stand mixer, beat together 1/4 cup butter and 1/2 sugar until they are well incorporated (evenly mixed)
    Add 1 egg to the mixture and beat again until well incorporated. 
Step 2: Mix Dry Ingredients
  1. In a small bowl, mix together 1 cup flour and 3 tsp baking powder.
Step 3: Make Lucky Charms Cookie Dough
  1. Slowly add the flour mixture to the mixing bowl, and beat together until the creamed sugar and flour mixture are well incorporated. 
Step 4: Add the Magic to your Cookies
  1. Fold in 1 cup Lucky Charms marshmallows and roll dough into 1 inch balls and place on your prepared baking sheet. 
Step 5: Bake Cookies and Enjoy
  1. Bake cookies for 12 minutes or until lightly golden brown. 
  2. Remove the cookies from the oven.
  3. Optional: Once you remove the cookies quickly place a few marshmallows on the top of the cookies for added decoration. Enjoy!
