1. Making the Witches Brooms

- Shape the Puff Pastry: Cut the puff pastry into small rectangles and thin strips with a sharp knife. These will form the bristles of the broom.Wrap the bottom of the pretzel stick with puff pastry and dip the puff pastry in the beaten egg to help it stick.Arrange the phyllo rods and wrap a thin strip of puff pastry around them.Carefully place your witches' brooms on a baking tray lined with parchment paper. Be gentle, as the brooms may fall apart before they bake. Bake in a preheated oven at 356°F for 5-7 minutes, or until golden brown.
2. Making the Cheese Sauce
- Pour the olive oil into a pan, add the flour and sauté it for 1-2 minutes, stirring constantly to prevent lumps.
- Add the Cream: Slowly pour the room-temperature cream into the pan, continuing to stir. Once the mixture begins to thicken, reduce the heat to low.
- Add salt and pepper to taste for the perfect seasoning.Incorporate the Cheese: Gradually add the grated Velveeta cheese in batches, stirring continuously with a hand whisk. Make sure the cheese melts fully before adding the next portion. Keep stirring until the sauce becomes smooth and creamy.
