- Step 1: Preheat oven to 350 degrees Fahrenheit. Place the cupcake pan close by.
- Step 2: Mixing In a mixing bowl, combine 2 egg whites, 1/2 cup sugar, 1 tsp vanilla, 2 tbs oil, and 1/8 tsp salt together. Add half of the flour and cornstarch into the bowl (1/4 cup of flour and 1/2 tbs cornstarch) and mix together. Once combines, add the remaining half of the flour and cornstarch (1/4 cup of flour and 1/2 tbs cornstarch).

- Step 3: Place the silicone mat (or parchment paper) on the baking sheet. Spoon about 1 1/2 tsp of the batter onto the mat and use the back of a spoon to spread the dough and make a circle about 3.5 to 4 inches in diameter. The goal is to make each circle close to the same size. Make 6 cookies at a time to make sure you have time to fold them into shape before they cool and harden.Note: If you are using thin parchment paper you can see through, you could trace 3.5-4 inch in diameter circles on the backside of the paper as a template.

- Step 4: BakingBake in the oven for 9-10 minutes or until the edges of the cookie are lightly browned. Remove the cookies from the oven and flip them over.
- Step 5: FoldingPick up one cookie and place the folded fortune cookie message in the middle. Fold the cookie in half, making a semicircle.Press the center of the semicircle over the edge of the cup to make it fold in the center Fold the center.Place the folded cookie into a cupcake pan to cool and harden for 30 minutes. The cupcake pan will help the cookie keep its shape.

- Step 6: Chocolate Dipping (Optional)Melt the chocolate in the microwave or with a chocolate melter. (This one is like our favorite that we use all the time)Place the melted chocolate in a chocolate squeeze bottle or piping bag and drizzle chocolate over half of each fortune cookie, then add sprinkles on the top. Let the chocolate harden for 10 minutes. Enjoy!

Notes
- You can make and store the fortune cookies ahead of time, in an airtight container.
- Prepare your fortune messages before you start baking.
- Once the cookies are baked, work quickly so you can fold the cookies before they harden.
- To make this a gluten free recipe, substitute the flour for any gluten free flour
- To make this a dairy free recipe, use a dairy free dark chocolate for melting. We are a fan of the Enjoy Life Brand.
