Birthday Cake Mini Muffins (Healthier Copycat Recipe for Lunchboxes & More!)

These Birthday Cake Mini Muffins are a fun, healthier twist on the classic store-bought favorite! Made with simple ingredients and rainbow sprinkles, they’re perfect for lunchboxes, snacks, or any day that needs a little celebration.

Ingredients
  

  • 1 1/2 cups Flour
  • 1/2 cup Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • Pinch of salt
  • 1/2 cup Applesauce
  • 1/2 cup Greek yogurt
  • 2 TBS Coconut oil, slightly melted
  • 2 Eggs
  • 1/2 cup Milk
  • 4 tbs rainbow sprinkles (Traditional Sprinkles or No Artificial Food Dye Sprinkles)

Method
 

  1. Step 1: Prep your pan by preheating the oven to 350°F and lightly greasing a mini muffin pan or lining it with paper liners.
  2. Step 2: In a large mixing bowl, whisk together the dry ingredients:
    1½ cups of flour½ cup of sugar1 teaspoon of baking powder½ teaspoon of baking sodaand a pinch of salt.Mix until everything is evenly combined.
  3. Step 3: In the same bowl, add the wet ingredients:
    2 eggs½ cup of milk½ cup of applesauce½ cup of Greek yogurt and 2 tablespoons of melted (but slightly cooled) coconut oil. Stir until the batter is smooth and well incorporated.
  4. Step 4: Gently fold in 3 tablespoons of rainbow sprinkles, saving the rest for topping.
  5. Step 5: Spoon the batter into your prepared mini muffin pan, filling each cup about ¾ full. Sprinkle the remaining 1 tablespoon of rainbow sprinkles over the tops of the muffins for a fun, festive look.
  6. Step 6: Bake for 8 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack to cool completely before serving (or packing into lunchboxes!). Now you can enjoy the perfect mini muffin!
