Mini Corn Dog Muffin Recipe

These mini corn dog muffins are perfect for snacks, lunch, dinner, and even parties. Think Corn Dog, without the stick.

Equipment

  • Nonstick cooking spray
  • Mini Muffin Tin
  • Large Mixing Bowl

Ingredients
  

  • 1 cup Yellow Cornmeal
  • 1 cup All-Purpose Flour
  • 1 TBS Sugar
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Milk
  • 1 Egg
  • 1/4 cup Canola Oil
  • 8 Hot Dogs- Cut into 1 inch pieces

Instructions
 

Step 1: Prepare to Bake

  • Preheat oven to 425 degrees F (220 degrees C) and grease a mini muffin pan with non stick spray.

Step 2: Make your Corn Muffin Batter

  • In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
    Then add the milk, eggs and oil. Stir until all the ingredients are mixed together and the batter is not lumpy.

Step 3: Make the Corn Dog Muffins

  • Add one tablespoon of batter to each spot in your muffin tin.
    Put one piece of hotdog into each filled muffin cup. Use a spoon to gently press the hotdog into the center of the batter.

Step 4: Bake and enjoy!

  • Bake 10 minutes or until baked through and golden brown.
    Let cool, and enjoy while they are still warm.
