White Chicken Chili Recipe

- 1.5-2 lbs Chicken chopped
- 1 medium Onion chopped
- 4 oz jar of chopped Jalapenos (or 3 chopped fresh Jalapenos)
- 48 oz can of Great Northern Beans
- 32 oz of Chicken Broth (4 Cups)
- 2 tbsp of Garlic minced
- 2 tbsp Cumin
- 2 tbsp Oregano
- 2 cups Shredded Cheese
Step 1: Onions and GarlicHeat a tsp of olive oil or butter on medium heat in your dutch oven or large pot.Add onion and saute for 4-6 minutes until they are cooked and translucent. Add garlic and saute for 30 seconds. Step 2: ChickenAdd chopped chicken and saute for 5-7 minutes. Stir to avoid sticking. Step 3: Add the FlavorAdd Chicken Broth, Chopped Jalapenos, Cumin, and Oregano. *To make the recipe less spicey drain juice from the can of jalapenos and/or add fewer jalapenos.* Step 4: Add the BeansAdd the beans and the liquid from the can, and mix well. Bring to a boil, then reduce the heat to medium-low and simmer for 45 minutes to 1 hour, stirring occasionally. Step 5: Garnish and ServeAdd 2 cups of shredded cheese, stir, add a garnish on top (parsley or cheese) serve. Enjoy!
- If you prefer your chili on the thicker side, try adding cornmeal, masa harina (aka corn masa flour), or polenta (aka Italian cornmeal) and letting it simmer for a few minutes until it thickens. You can also add heavy cream or cream cheese if you want it to have a creamier texture.
